I'm a Wii virgin looking to buy a console for my daughter but know nothing about these consoles. Therefore I'm looking for some guidance on what's good to have, what's essential and whether there are things like a minimum amount of controllers, if I need to buy memory for it or whether it can be used straight out the box etc. She wants the Wii Fit board and Guitar Heros' so if you guys can help with recommends for that as well, that would be great. Also, anyone know where in the UK the Wii Fit boards can be purchased for a reasonable price and where anyone has any stock.
I know this is a lot of questions but I'm really grateful for any suggestions.

First of all, the console comes with everything you need to get playing straight away! It comes with Wii Sports which will keep you well amused and 1 remote and 1 Nunchuk.
If you want more people to join in then you will need to purchase additional Remotes and Nunhuks. Note that not all games require both, quite a few only require the remote. You will be able to see what ones require what by the pictures on the back of the box.
All the Wii's memory is internal, so there's no need to buy extra, unless you want to display pictures on the Wii, in which case you eed an SD card.
You've picked a great time to buy GH as it is available for only £40 through Amazon right now! It's RRP is £70, so that's a real bargain! Wii Fit on the other hand is very, veyr hard to get hold of, so you'll probably want to sign up to a stock checking site and check locally on the of chance a delivery has been made.

if you want another wiimote for two player fun (a must in my opinion) get a copy of wiiplay as it comes packaged with a wiimote for around £30 the games not amazing but still alot of fun to play
Very very little to add aside from the suggestion that a good set of rechargeable batteries are very handy. Wiimote charging stations are sold, but are a little pricey relative to a bog standard charger.

Dickie every wii comes with Wii sports and a wiimote+nunchuk, there is no special "pack" and those golf club/tennis racket peripherals are just a waste of money, they don't do anything for you.

Thanks for all your advice and info. We finally purchased the Wii from Wooolies and got the sports pack and Wall-e thrown in. Not a bad buy as we priced it all up individually and the bundle was cheaper. Can't wait for her to start playing with it now. Thanks again for all the good stuff above, you guys are great.
