I'm not entirely sure I'm getting the most out of this game because so far the only things I've done are help Tom Nook in his shop until he made me redundant and just fished, collected shells and fruit to pay off my mortgage...
Am I missing out on a lot here? I've had no other 'tasks' to do as such

I'm wondering the same, so far Ive helped Tom Nook, fished, picked apples, dug for fossils and caught butterflies. Ive delivered a few letters that people have asked me to take but thats about it!
New people keep arriving in my village though and I just paid the last of my mortgage off yesterday so hopefully I'll be getting a new house soon.
Hopefully there is more...

After you help Tom Nook out in the shop there realy isn't much to do in the way of favours for people, mainly you just try and get the biggest house, donate fossils and the fish and insects etc. You can talk to people as they might ask for a favour etc but you can also wait for people to come into Town who will need your help with things.

Apples?! I've got cherries on my trees and I can't find a buterfly net for the life of me! It's never in the shop, but there's always a spade and a fishing rod, both of which I've already got!
I must've caught almost all of the fish now... I'm well onto the second page for the museum. I paid off my mortgage yesturday so I'm expecting to move into my new house today!

I doubt you've caught all the fish Foo. Some of them only appear in certain months of the year so it can take all year to get them all unless you time travel.
You'll be wanting to get yourself some foreign fruit aswell, since they sell for more at the shops. I have all the fruits so you can come to my town to get them if you like.

There'll be more mortgages and more upgrades for your house aswell.
You can visit other towns and buy from their shops if yours doesnt have what you need. Your shop will upgrade over time aswell. Mine is now a Nookingtons and it has a second floor and a hairdressers!
