"Once in every generation one is chosen.. .. .. .. " to paraphrase the beginning of a popular TV show. Once you've had a moment of inspiration and created games like SMW and SMB3, which are genre defining, it is almost impossible to ever top or re-create that. Everything that comes after will always be referenced to those great games.

Mario Galaxy childish? How exactly? Yes, the early levels are a bit easy as it teaches you to use the wiimote and interact with the different objects, but this is not a kids game. The difficulty level is there in spades in the later levels as you are forced to think as well as have good reactions.
I think that, as with all things, tastes and fashions change. Following on from the success of Galaxy there will be a number of games that imitate the 3D aspect of the levels as the public has shown that it is still prepared to buy this type of game. Until recently however the console market has been dominated by the Xbox and Playstation and the type of game prevalent on those systems. Whether it is right or wrong, the perception is that these systems are aimed at young males who want driving and FPS games. With the Wii breaking that control of the market there is now a wider audience for a different type of game.. .. ..
