It's worth messing around with the "arcade" and "professional" settings.
I think a good general rule is:
Do you play flight sims on the pc (like M$ flight simulator x)? ...you'll prefer "pro" setting
Do you play arcade flyers on consoles (like the ace combat series)? ....you'll prefer "arcade" setting
Find the one you like and stick to it (I like codemaster's thinking here....giving
us more choice on the control system - it's not like "configure the buttons you press", in this case they're completely different ways of flying)
